It’s a lazy Sunday.

You and your favorite people are taking the road less travelled to the waterside spot on the outskirts of town.

The sun is shining, the windows are down. Willie’s on the radio.

A blanket and the perfect picnic sandwich are packed for the ride.

This is the good life …


THE PICNIC SANDWICH

INGREDIENTS

2 fresh baguettes

3 tablespoons softened butter

3 tablespoons of Dijon mustard

1 pound of old fashioned, off the bone ham, sliced

1 pound Gruyère cheese, sliced into triangles

8 spinach leaves

1 small tomato, sliced thin (optional)

 METHOD

Slice the baguette in half lengthwise.  Remove a small portion of the interior bread to create a trough.

Spread butter and Dijon mustard on both sides. Layer ham, cheese, spinach leaves and tomato slices on bottom half of baguette.

Close the sandwich and cut at an angle. Wrap with paper and twine.
